RECIPE & INGREDIENTS:
___________________________
1 1/2 cup warm water at 100-110 F
1 packets of instant rise yeast
1/2 teaspoon Xanthum Gum (if flour doesn't have anthem gum in it then add another 1/2 teaspoon)
1 teaspoons honey or molasses (to your preference, I prefer honey)
1 tablespoon baking soda
1 1/2 salt
4 1/2 cups all purpose gluten free flour (depending on the flour you use)
1 tablespoon sugar
3 tablespoons melted and cooled butter
2 teaspoons baking powder

STEPS:
____________
Preheat over to a warm temperature (200 is what I did) and then turn off to bring temperature down but not cold for the bagels to proof
Combine warm water, instant dry yeast, and sugar together, stir and set aside until it starts to foam
While waiting for wet ingredients, combine flour, salt, baking powder, xanthum gum together
Once wet ingredients is foaming (5 minutes of so) add in melted and rolled butter along with honey or molasses
Whisk all wet ingredients together and add into the dry ingredients.
Mix on medium until dough is a sticky play dough texture.
Add more flour to achieve sticky but not too sticky of a texture.
(DOUGH SHOULD BE STICKY BUT NOT UNABLE TO WORK WITH)

Line baking sheet with plastic wrap
Grab palm full or more of dough depending on how big you want your bagels
Roll into a log and then shape into circles connecting the ends.
Place on cooking sheet with enough room for them to expand without touching each other.
Cover loosely with plastic wrap (another piece) and place in over to proof for about 15 minutes
Take out bagels and Preheat oven at 425.
Bring big pot of water and baking soda to a boil
Once boiling throw in bagels and boil for 30 seconds to a minute on each side, place of cookie sheet lined with tin foil (can add toppings here it you would like)
Once all bagels have been boiled, pop into oven for 20 to 25 minutes or until golden brown
Take out and put on cooling rack and ENJOY!
