Ingredients:

For batter:

Parboiled rice - 1 and half pav (Soaked 5 hours)
Urad dal - 1/4th pav (Soaked 3 hours)
Methi / fenugreek seeds - 1tsp
Yeast - 1 tsp
Salt as per taste

Batter Preparation:

* Drain off the water from rice and blend to smooth paste adding water as required.

* Transfer the smooth and fluffy batter into a large bowl.

* Drain off the water from Urad dal and Methi and blend to smooth paste adding water as required.

* Add 1tsp of Yeast and mix it.

* Transfer the batter to the bowl of Dosa batter.

* Add 1tsp of salt.

* Make sure everything is mixed well.

* Now cover and rest in a warm place for 8-10 hours.

* Batter is ready.


For onion toppings:

Ingredients:

Onion finely chopped - 2
Carrot Finely Chopped- 2
Green chilli finely chopped - 1
Coriander Leaves - 1 small Bunch
Salt

Toppings Preparation:

* In a large bowl take 2 onions, 2 Carrot, 1 chilli, Coriander Leaves and pinch of salt.mix wel and keep a side.


Onion Uttapam Preparation:

* Heat a pan and apply ghee/oil

* Pour batter, spread out in a circular motion.

* Now spread the toppings on top of the uttappa evenly.

* After the topping have been added press gently so the toppings are pressed into the batter.

* Cover it and let it cook for 1-2 minutes in low flame.

* Add 1 tsp of Ghee around the uttappa.

* Flip over to the other side once the dosa looks cooked.

* finally, onion uttapam is ready to be served with chutney of your choice.
