Watch how I sharpen a Victorinox Santoku kitchen knife on my Tormek T-8, after I beat it up.. from razor sharp, to damaged and dull, back to razor sharpness again. Just look at those sliced cucumbers! I love it!
Sharpening knives is great fun! I like to make videos about it, now and then. It’s not my core business (woodwork is), but I do sharpen knives every month for customers. Sometimes 10, other times 2-300..
The Victorinox Santoku knife is a average knife, a bit thin and flexible, not a cheap nor expensive knife, but.. For our needs it gets the job done. The form is great, and I just love it’s wooden walnut handle.
