Zoe's mackerel, roasted cauliflower and almond salad

Serves: 4, Prep: 15min, Cook: 5min

Ingredients:
400g tin mackerel (or tuna)
2-3 cups cauliflower, cut into small florets
2-4 tbsp. Extra virgin olive oil
2 cups button mushrooms, stalks removed and slices thinly
150g roasted almonds, roughly crushed
4 celery, cut thinly
2 cups baby spinach leaves, washed, dried

Dressing ingredients:
4 tbsp almond oil (or use walnut oil)
½ a cup of extra virgin olive oil
4 tbsp apple cider vinegar
Sea Salt and freshly ground pepper

Method:
Pre-heart oven to 180C. Mix extra virgin olive oil, cauliflower, sea salt and pepper toss and cook till roasted golden brown, approx. 15 mins.

In a large bowl, toss the mackerel and all the salad ingredients. Add cauliflower once cooked

Mix the dressing ingredients together and pour over salad.
