Instant Pot Farmhouse Potato Soup
Ingredients:
6 strips bacon
2 tablespoons butter
3 pounds russet potatoes, washed and diced
1 onion, diced
1 clove garlic, minced
1/2 cup all purpose flour
1/2 tsp ground thyme
6 cups chicken broth
1 cup milk
1 cup heavy cream
salt & pepper, to taste
1/2 cup sour cream
Toppings:
(optional)
shredded cheese
bacon
green onions
parsley
chives
Directions:
Cook bacon until done on the sauté setting in the Instant Pot.
Remove bacon and set aside for topping later.
Add butter to instant pot and scrape bottom to prevent food burn warning.
Add onion and potatoes and sauté 5 minutes.
Add the garlic and continue cooking 1 minute.
Turn sauté off.
Add the flour and thyme.
Next add the chicken broth, milk, cream, salt, and pepper.
Cover, seal, and cook on high pressure for 8 minutes.
Allow a slow release of the pressure when the cook time is up.
When pressure has been release stir in the sour cream.
Use an immersion blender to mash up potatoes to desired consistency.
Serve with toppings of your choice.
