Indulge in Mediterranean flavors with my Sardines with Avocado Salsa Toast! This recipe combines omega-3-rich sardines with creamy avocado salsa on crispy sourdough toasts. Packed with fresh ingredients, it's a quick, nutritious meal or snack. Join me in the kitchen for this flavorful treat!

Ingredients:
- 1-1.5 ripe avocado
- ½ small red onion
- red chili pepper (to taste)
- 6 oz (170 g) tomatoes, deseeded
- Salt
- ½ lime, juiced
- 1 tbsp fresh parsley
- 3-4 slices sourdough bread (halved)
- 3.75 oz (100 g) can sardines in oil
- A handful of arugula

Instructions:
1. Prepare the salsa:
- Dice the avocado flesh.
- Finely chop the red onion.
- Deseed and chop the chili pepper.
- Deseed and finely chop the tomatoes. If using cherry tomatoes, leaving the seeds is fine if they're not too juicy.
- Add salt to taste and squeeze the lime juice over the mixture.
- Chop the fresh parsley.
- Mix all the ingredients together thoroughly.
2. Toast the bread:
- Slice the sourdough bread.
- Toast the slices with or without oil to your preference.
3. Prepare the sardines:
- Drain the sardines from the can.
- Using a fork, break up the sardines into smaller pieces.
4. Assemble the dish:
- Place the toasted bread slices on a serving plate.
- Arrange the sardines on top of the bread slices.
- Layer the arugula on top of the sardines.
- Spoon the prepared salsa over the arugula.
Serve immediately and enjoy your delicious Sardine and Avocado Salsa Toast!
