Lamb is getting more popular in the US, and the price of lamb is also going down. Americans eat lamb during Easter because of the symbolic nature of lamb in Christian religion. Lamb has a distinct flavor and has texture that parallels beef. I always enjoy lamb, and I decided to develop a method to stir-fry lamb to create a texture that is moist and tender. This video demonstrates this stir-frying technique with asparagus, Portobello mushrooms, sweet bell peppers, scallions, and a light touch of oyster sauce.
