Strawberry Jam Stuffed Beignets

These beignets are perfection! Super soft and filled with strawberry jam! I promise that you will eat more than one LOL

Ingredients: (yields about 30 beignets, feel free to cut the recipe in half if you dont want as much)

2 cups all purpose flour
2 cups bread flour
2 1/4 tsp instant yeast
1 tsp fine pink Himalayan salt
1/2 cup evaporated milk
1/2 cup sugar
3/4 cup lukewarm water
2 large eggs, beaten
1 teaspoon vanilla extract
2 tbsp unsalted butter, room temperature
1 tbsp olive oil
2 cups of Strawberry Jam, I used 1 tbsp of jam per beignet
Powdered sugar, for dusting beignets
extra flour for rolling out the dough (a few tablespoons)
Avocado, canola or corn oil for frying

Directions:

Combine all-purpose flour, bread flour, instant yeast, and salt in a large bowl. Mix thoroughly. Then, gently warm the evaporated milk; it doesn't need to reach a specific temperature, just ensure it's warm enough to dissolve the sugar. Stir the sugar into the milk until fully dissolved.

In a stand mixer bowl, add the dry ingredients and pour the milk-sugar mixture over them. Using the paddle attachment, start mixing, and pour in the warm water. Mix until just combined, then switch to the dough attachment. Incorporate the vanilla extract and beaten eggs, mixing for about 5 minutes.

Transfer the dough onto a floured surface and knead for another 5 minutes. Place the dough in an oiled bowl, covering it with a damp paper towel. Let it rise in a warm area for 1 hour.

After the hour, place the dough on a floured surface and roll it out to a thickness of 1 inch. Use a pizza cutter to cut the dough into 2-2 ½ inch pieces. Cover the beignets with a damp towel and let them rise for another 30 minutes, ensuring they're not touching to prevent sticking.

Heat the oil to 350 degrees Fahrenheit and fry the beignets for 3-4 minutes on each side until golden brown. Transfer them to a paper towel-lined plate to absorb excess oil. Use a butter knife to make a hole in each beignet, then fill it with about 1 tablespoon of strawberry jam using a piping bag. Dust with powdered sugar and enjoy!
