Today's recipe is for mille crepes made with 4 kinds of fruits.
The crepe dough can be made with either rice flour, which makes the crepes moist and sticky, or cake flour, which makes them light and fluffy.
By adding sour cream to the cream, the crepe becomes firmer and less likely to fall apart, making it easier to work with and also making it easier for the fruit to blend in.
You can also use mascarpone cheese or Greek yogurt instead of sour cream.
We used cane sugar for the sugar, but it can be replaced with other sugars such as granulated sugar without any problems.

▷Ingredients:
■Crepe dough (enough for 9 crepes in a 16cm pan)
1 whole egg
15 g vegetable oil
20 g cane sugar
40 g rice flour or cake flour
120 ml milk
1 tsp vanilla extract

■Cream
200 ml heavy cream
20 g cane sugar
90 g sour cream

2 bananas
3 kiwi fruits
canned mandarin oranges
8 strawberries

▷How to make:
1. Beat the whole egg, add the oil and mix well.
2. Add sugar and rice flour and mix until glossy.
3. Add milk and vanilla and mix.
4. Heat a frying pan, spread a thin layer of oil, spread the batter thinly and bake.
5. When the edges of the crepe start to brown, turn it over and cook for 20 seconds before removing.
6. Beat the heavy cream and sugar in an ice water bath.
7. Add sour cream and beat until stiff peaks form.
8. Cut strawberries in half, kiwi into quarters, and bananas in half lengthwise. Drain off the syrup from the canned mandarin oranges.
9. Spread a thin layer of cream on the cooled crepe, arrange the fruits on top, and cover with cream. Decorate to your liking and serve.
