4 pounds of Menudo Regular 1kg 500grs

1 medium onion
1 bay leaf
1 head of garlic
Salt to taste

6 chiles de Arbol (spicy)
3 Ancho chili peppers (Not hot)
10 Guajillo Chiles (Not hot)
1/4 of white onion
3 cloves
5 garlic cloves
Salt and pepper to taste
1 pinch cumin powder
1/4 tbsp dried oregano
3 tablespoons of oil to fry the Red chile
8 Sprigs of Fresh Epazote
