Ingredients

2 tbsp oil
3-4 saltfish fillets
1 roma tomato
1 small onion
2 stalks scallion
5 garlic cloves
1 tsp scotch bonnet pepper(to taste)
1 can ackee
Fresh thyme as needed
Season to taste with all purpose seasoning
Salt and pepper to taste
