If you’re looking for an easy vegetarian dinner, this rice bowl is definitely it. I love roasted broccoli, and the other fresh ingredients in this bowl work seamlessly together. Check out the recipe and get ready to cook!

Rice is an easy ingredient to prep ahead. The next time you make rice, go ahead and double or triple your normal recipe. That way you have rice in the fridge, perfectly chilled for stir fry, or another one of these delicious rice bowl recipes.

Onions + garlic are also easy to prep ahead. Chop 2-3 cups of onion at a time, and several cloves of garlic. Be sure to secure them in air-tight containers to ensure the fridge doesn’t start to smell, then grab whatever amounts you need per recipe throughout the week.

00:11​ Add 6 cups broccoli
00:13 Pour 1 tsp olive oil over broccoli
00:14 Add in salt and pepper to taste
00:16 Toss to coat broccoli
00:21​ Spread on baking sheet
00:23 Roast at 400 degrees F for 10 mins
00:28 Spread 1 cup julienned carrots on baking sheet
00:29 Return to oven for 5 more minutes
