Hey friends , today am sharing this step by step biryani recipe that you can do in your own kitchen.
For this recipe you need potatoes, cauliflower, eggplants and carrots, You need spices and fresh herbs to make the dish , that am sure you and friends or family will definitely enjoy.
For the rice
4 c Basmati rice, washed until water runs clear , set aside
6 c water
2 bay leaves
4 black cardamoms
4 green cardamoms
6 whole cloves
2 small cinnamon sticks
2 tbs kosher salt
1 tsp vegetable oil
1tsp rice wine vinegar or lemon juice

For the fried onions
1large or 2 medium onions, sliced thin
vegetable oil for frying

For the vegetables
3 Red potatoes, peeled and cut bite size
1/2 Cauliflower head, cut into bite size florets
2 medium size carrots , peeled and diced , medium.
2 Small eggplants or 1 large, stripe peeled and cut into bite size

For the marinade/ base
2 tbs Vegetable oil
2 tbs fried onions
3 Roma tomatoes, diced very small
1 tsp tomato paste ( optional )
1 tsp Chili powder
1 tsp turmeric
1 tbs coriander
1tsp cumin
1 tbs garam masala
1/2 c plain yogurt
1tbs ghee
1 lemon zested and juiced
1 bunch cilantro divide for cooking and layering, plus some for garnish
1/2 bunch fresh mint, picked ( Same as cilantro )

To Finish
1/4 c milk
1/2 tsp turmeric ( Saffron is the ideal spice to use however food color works too )
Fried onions, above
fresh herbs, above
1 tbs Ghee

For the Raita
2 tbs plain yogurt
1tsp zest and juice
1 tbs cilantro and mint, from above
1 tbs water to thin or as needed
Salt and pepper to taste
