Hope you enjoy this yummy, nutritious muffin recipe that everyone loves! Recipe from Cara Clark Nutrition.
RECIPE ||
Makes 10-12 Muffins
1/2 cup pumpkin puree
1/2 cup natural almond butter
1 egg
1 tsp vanilla extract
1/4 cup cacao powder
1/4 cup raw honey
1/2 tsp baking soda
Dash sea salt
1/2 larg zucchini, shredded and squeezed dry with a clean kitchen towel. (about 1 cup)
1/3 cup dairy free, mini dark choc chips
Preheat oven to 375 and line muffin tin.
To a blender, add Pumpkin, almond butter, egg, vanilla, cacao powder, honey, baking soda and salt. pulse or blend until just combined. For in zucchini and chocolate chips.
Bake for 20-25 mins. Let cool in pan for 10 mins before removing to enjoy!
