Often paired with green garlic, daikon or apple, mullet roe is a delicacy widely enjoyed by Taiwanese people during Lunar New Year and other festive occasions. Due to climate change and overfishing, mullet yield from fishing has become unpredictable, which prompts more and more fishers to invest in fish farming. It takes at least 3 years to produce mature mullet for roe extraction, and it also requires skilled fish butcher to dissect the fish without damaging the roe.
