Today I’m sharing my easy chicken curry recipe! This is the perfect chicken curry for beginners. It has easily available ingredients and requires less effort. This chicken curry can be made with chicken breast, chicken thighs or bone in chicken. Pair this simple chicken curry with rice for a perfect weeknight meal!

RECIPE
INGREDIENTS:
450g/ 1 lb chicken (with or without bone)
2 medium onions
1/2 cup (100 ml) tomato purée
1 tsp grated ginger
1 tsp grated garlic
6-8 coriander/cilantro stems
4 tbsp yogurt/curd
1 cup hot water
Salt (as needed)
Cooking oil (as needed)
Optional: 1/2 tsp garam masala
—spice mix—
3 tsp coriander powder
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tsp cumin powder

METHOD:
1. Finely chop 6-8 stems of fresh coriander/cilantro
2. Marinade chicken with yogurt, chopped coriander/cilantro and 1/2 tsp salt for 30 minutes or until the prep is done
3. Finely chop 2 medium sized onions. Grate 1 tsp ginger and garlic. Ginger garlic paste can also be used
4. Use 1/2 cup store bought tomato purée or blend 2 medium sized tomatoes until smooth
5. Prepare the spice mix and set aside. You can also use 1 tbsp of store bought curry powder if you don’t have separate spice powders
6. On medium flame, heat oil in a pan and sauté onions until golden brown
7. Add grated ginger and garlic, fry lightly for 1 minute or until fragrant
8. Add the spice mix and sauté for 30 seconds. Be careful to not burn the spices
9. Add 1/2 cup (100 ml) tomato puree, 1/4 tsp salt and mix well. Reduce the puree until it turns into a thick paste. This will enhance the flavour of the curry
10. Add in the marinated chicken and mix well. Lightly fry until the chicken starts to turn white
11. Add 1 cup hot water and simmer until the chicken is cooked through. Add more water if it's too thick. Taste and adjust salt as needed
12. Optional: add 1/2 tsp garam masala at the end
13. Serve this delicious chicken curry with rice or roti

SUBSTITUTES:
• Can’t eat spicy food?
Use paprika or mild chilli powder like Kashmiri chilli powder

• No cilantro/coriander?
Skip it

• No tomato purée?
6 tbsp tomato paste + 1/3 cup water

TIPS:
• Use ghee instead or oil for a rich and delicious curry
• Sprinkle a pinch garam masala at the end for added flavour
