Today we share our recipe for our epic 7-cheese vegan Mac & Cheese! In this vlog, we make Mac & cheese using 6 cheeses from Violife and cheese from Daiya! We also share what we believe are the best and worst vegan cheeses!

Infinite 7-Cheese Vegan Mac & Cheese Recipe

//Cheese sauce//
2 tablespoons of flour
2 tablespoons of vegan butter
1 1/2 - 2 cups of Planet Oat Extra Creamy Oat milk
1-2 tsp Trader Joe’s 21 Seasoning Salute
1/2 tsp Organic Mustard (not ground mustard)
5 Violife provolone slices
5 Violife mature cheddar slices

The grated cheeses
2 packs Violife Epic smoked cheese block, grated
2 packs Violife Epic mature block, grated
1/2 a wedge of Violife Parmesan, grated

Additional Ingredients
16 oz of Mueller’s elbow pasta
1 Oz of crumbled Violife Feta
1 pack of Daiya cheddar shreds, Cutting Board Collection
1-2 tablespoons of Edward & Sons Breadcrumbs (Italian or Low Salt)

Directions
1. Preheat oven 375 degrees.
2. Boil and drain pasta, set aside.
3. Melt butter in saucepan.
4. On low, slowly whisk in sifted flour, 1/2 a teaspoon at a time, to make sure the flour cooks thoroughly, around 5 minutes.
5. Add oat milk 1/4 cup at a time, while whisking together with butter and flour for a few minutes.
6. Mix in seasonings and mustard.
7. Turn stove to low, add 1/2 pack of Daiya + all sliced cheeses to sauce, cover pot, and melt cheese, about 2-3 minutes.
8. Uncover and mix cheese into sauce.
9. If needed, slowly add more milk, and seasonings to your preferred taste. Sauce should be thick and cheesy, yet easily pourable, and not too runny.
10. Add 1/2 of the cooked pasta to tray.
11. Add a layer of feta on top of the pasta.
12. Add remaining pasta on top of the feta.
13. Pour cheese sauce over pasta, use a spatula to spread evenly across the top.
14. Cover with foil and put in the oven at 375 degrees for 15 minutes.
15. Uncover and add remaining Daiya cheese and breadcrumbs.
16. Place in the broiler for 1-2 minutes. KEEP AN EYE ON IT, as it will burn if you leave it any longer.
17. Remove from the oven, let cool 10 minutes before serving.
