This video is for anyone who has ever wanted to learn How to Make Homemade Mole Sauce from Scratch. Mole is one of the most delicious, complex sauces in all of Mexican cuisine. It's spicy, sweet, nutty, and smoky all at the same time, and poured over any number of foods (roasted chicken, burritos & enchiladas, among others) it infuses so much wonderful flavor. There are many ways to make homemade mole, and the variety of ingredients may surprise you. But in the end, it comes together in a rich, delicious sauce. Read on for the full recipe.

Mole from Scratch

6 dried ancho chiles, remove stems, seeds & veins
2 tomatillos
1 garlic clove
2 dried corn tortillas, cut in pieces
1 slice any kind of bread, cut in pieces
1 round tablet of Mexican chocolate
1/4 cup raw almonds
1/4 cup pumpkin seeds
1 Tbsp. sesame seeds (plus more for garnish)
1 star anise
1/4 tsp. cloves
2 Tbsp. peanut butter
4 cups chicken broth
salt to taste (approx. 1 Tbsp.)
1 Tbsp. piloncillo (optional for sweetness)
lard or canola oil for frying

Heat large skillet on stovetop with approx. 3-4 Tbsp. oil or lard. Quickly toast cleaned chile pods in oil for a couple of minutes to slightly brown them, then remove and place chile pods in large bowl. Add tomatillos and garlic into same skillet and roast until they have char marks. Remove and place in large bowl with chile pods. Then add almonds, pumpkin seeds, sesame seeds, bread, corn tortillas, star anise, cloves, piloncillo and salt to the same skillet and let them cook in same oil until everything looks roasted and sesame seeds begin to pop. Put all the ingredients in the bowl back into the skillet, along with the peanut butter and chicken broth. Let it cook approximately 10 minutes, while stirring. Take pan off stove and carefully transfer all of its contents into a blender and purée. (Depending on the size of your blender, you may need to do this in increments.) Clean and reheat large skillet with enough oil to coat the bottom. Pour mole sauce from blender into the skillet and let cook on low for 10-15 minutes. While it's simmering, use a serrated knife to shave chocolate tablet into smaller pieces. Add chocolate to mole sauce and stir until completely melted. Pour sauce over your desired food and enjoy while it's hot.

*Note, the longer mole sauce simmers, the thicker it will get. If you like it more runny, add more chicken broth or water. Any leftovers can be stored in the refrigerator. When you reheat it, you will likely need to add more water.
