Recipe: Beef Tips and Gravy

Ingredients:

Beef stew meat (approximately 2 lbs), cut into bite-sized pieces
2 tablespoons butter
Salt and pepper to taste
1 teaspoon garlic powder
Flour for coating
2 tablespoons olive oil
1 large onion, diced
2 tablespoons minced garlic
1/4 cup red wine vinegar
1 box (32 oz) beef broth
1 bay leaf
1 tablespoon dried thyme
1.5 tablespoons dried oregano
1/2 teaspoon red pepper flakes
2 teaspoons Worcestershire sauce
1 tablespoon Better Than Bouillon Roasted Beef Base
1 tablespoon tomato paste (optional)
1/4 cup cornstarch (for thickening)
Instructions:

In a bowl, season beef stew meat with salt, pepper, and garlic powder. Coat the meat with flour.
In a large skillet, heat olive oil and 2 tablespoons of butter. Brown the beef on all sides in batches. Set aside.
In a Dutch oven, add another tablespoon of butter. Sauté diced onions until softened.
Deglaze the pot with red wine vinegar, scraping up any browned bits from the bottom.
Return the browned beef to the pot.
Add beef broth, bay leaf, dried thyme, dried oregano, red pepper flakes, Worcestershire sauce, Better Than Bouillon, and tomato paste (if using).
Bring the mixture to a boil, then reduce heat to simmer. Simmer for 30-45 minutes until the beef is tender.
In a small bowl, make a slurry with cornstarch and a small amount of beef broth.
Stir the cornstarch slurry into the pot and bring to a full simmer until the gravy thickens.
Adjust seasoning to taste.
Serve beef tips and gravy over mashed potatoes, buttered noodles, or your preferred side.
