This Tomato Soup is so delicious, and so easy to prepare, it is a favorite in our house because not only is it packed with flavor, but it’s also nutritious. I think that the addition of sweet potato, basil and freshly grated Parmesan cheese along with a golden roux will take this soup to the top of the list of favorites. I always have homemade canned tomatoes, so it’s a soup that never fails in my house, and it is so good when sided with a grilled cheese sandwich or easy cheesy homemade croutons. If you have leftovers you can freeze it in a tightly sealed freezer container for up to 3 months. I hope you give it a try.❤️

INGREDIENTS ______________
56 oz. canned tomatoes or 2- 28 oz. cans store bought tomatoes
3 C. large diced onions
1 1/2 C. small diced sweet potato
1 Tbsp Olive oil
2 C. Chicken Broth
3 tsp sugar (to neutralize acidity)
Salt as needed
Pepper as needed
3 Tbsp butter
3 Tbsp All purpose flour
2 tsp Italian Seasoning
3 finely minced Garlic cloves
1 tsp Onion powder
1/8 tsp Cayenne pepper (optional)
1 tsp Paprika
Finely sliced fresh Basil as needed plus extra for topping
3/4 C. freshly grated Parmesan Cheese and extra for topping
•Served with homemade cheesy Croutons
