How to Make Chicken Parmigiana Easy: What you will need: Chicken breasts, flour, breadcrumbs, eggs, parmesan cheese, mozzarella, fresh herbs, and a rich tomato sauce. Ingredients:
4 boneless, skinless chicken breasts, pounded thin
Salt and freshly ground pepper
2 cups flour
2 cups Italian Breadcrumbs
4 eggs
1/4 cup freshly grated parmesan cheese
Fresh basil and/or parsley
Fresh mozzarella cheese, thinly sliced
Olive oil
Sauce:
2 tablespoons olive oil
1 can crushed San Marzano Tomatoes
Onion
Salt/Pepper

Directions:
Preheat oven to 400 degrees. Season chicken on both sides with salt &pepper. Dredge each breast in flour, egg, then breadcrumb/parmesan cheese mix.
Heat olive oil in saute pan (I like Le creuset) then cook chicken until golden brown (about 2 mins each side).
Make the sauce in a saucepan by heating olive oil and cooking the onions until soft. Stir in San Marzano tomatoes and season according to your liking.
Transfer chicken to a baking dish and top each breast with tomato sauce, mozzarella & parmesan cheese.
Bake in the oven for about 5 minutes until chicken is cooked then garnish with fresh basil or parsley.
