CRAKCERS
1 ¼ cups all-purpose flour, plus more for dusting
2 oz grated parmesan (about ½ cup)
1 ½ tsp sugar
¾ tsp salt
½ tsp pepper
½ cup cold unsalted butter, cut Into small pieces and frozen
1 ¾ tsp poppy seeds, divided
3-6 tbsp Ice water
in a food processor, combine flour, parmesan, sugar, salt, and pepper. Add butter and pulse until mixture resembles coarse crumbs (slightly smaller than peas). Pulse In 1 tbsp sesame seeds and 1 tsp poppy seeds until combined. Continue to pulse, adding 3 tbsp Ice water, until dough Is crumbly but holds together when squeezed. Pulse additional Ice water, 1 tbsp at a time, If necessary; do not over mix. Form dough Into 6x8 In.rectangle and refridgerate.
Heat oven to 350. Let dough soften slightly at room temp, 5-10 min. On lightly floured parchment paper, with floured rolling pin, roll out dough to about 11x13 Inch rectangle. Slide onto a baking sheet with parchment and freeze until firm, 15 min.
Slide Parchment with dough onto work surface and using ruler cut dough into 1 ¼ Inch squares. Slide onto rimmed baking sheet and grate remaining parmesan over top. Sprinkle with remaining 1 tbsp. sesame seeds and ¾tsp poppy seeds. Bake, removing outer crackers as they are done If necessary, until golden brown, 20-25 min.
