Ingredients:

1 kg pork ribs, cut into individual ribs
sprinkle of salt and pepper
1 tsp chicken bullion powder
3 tsp sugar
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil

mix and add to marinate for 30+min
1 tablespoon cornstarch
1 egg

Vegetable oil, for frying
mix 1 cup all-purpose flour with 1 tablespoon cornstarch for pork ribs coating before frying pork ribs for 10-15mins

for stir fry with fried ribs
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 small onion, diced

For the Sweet & Sour Sauce:

1 cup water
1/2 cup white vinegar
1/2 cup sugar
1/2 cup tomato sauce
1 tablespoon cornstarch mixed with cold water water

Marinating the Pork Ribs:
In a large bowl, combine the pork ribs with a sprinkle of salt, pepper, and chicken bullion powder.

Add 3 teaspoons of sugar, 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of sesame oil to the pork ribs. Mix well to ensure the ribs are evenly coated with the marinade.

In a separate bowl, mix 1 tablespoon of cornstarch with 1 beaten egg until well combined. Add this mixture to the marinated pork ribs and mix thoroughly to coat the ribs evenly. Allow the ribs to marinate for at least 30 minutes, or preferably longer, to allow the flavors to meld.

Coating and Frying the Pork Ribs:
In a shallow dish, mix 1 cup of all-purpose flour with 1 tablespoon of cornstarch. Dredge each marinated pork rib in the flour mixture, shaking off any excess.

Heat vegetable oil in a deep fryer or large skillet over medium-high heat. Once the oil is hot, carefully add the coated pork ribs in batches, making sure not to overcrowd the pan.

Fry the pork ribs for 10-15 minutes, turning occasionally, until they are golden brown and cooked through. Remove the fried ribs from the oil using a slotted spoon or tongs, and transfer them to a plate lined with paper towels to drain any excess oil.

Stir-Frying with Vegetables:
In a separate skillet or wok, heat a small amount of vegetable oil over medium-high heat.

Add the diced red, green, and yellow bell peppers, along with the diced onion, to the skillet. Stir-fry the vegetables for 2-3 minutes, or until they are slightly softened.

Preparing the Sweet & Sour Sauce:
In a saucepan, combine 1 cup of water, 1/2 cup of white vinegar, 1/2 cup of sugar, and 1/2 cup of tomato sauce. Stir well to combine.

Place the saucepan over medium heat and bring the mixture to a simmer.

In a small bowl, mix 1 tablespoon of cornstarch with a few tablespoons of cold water to create a slurry. Gradually pour the cornstarch slurry into the simmering sauce, stirring continuously.

Continue to simmer the sauce for 2-3 minutes, or until it thickens to your desired consistency.

Combining the Sweet & Sour Sauce with the Ribs and Vegetables:
Once the vegetables are cooked to your liking, pour the prepared sweet and sour sauce over them in the skillet.

Add the fried pork ribs to the skillet, tossing everything together gently to coat the ribs and vegetables evenly with the sauce.

Continue to cook for another minute or two, allowing the flavors to meld and the sauce to heat through.

Serving:
Transfer the Sweet & Sour Pork Ribs and vegetables to a serving dish.
