Indian festivals such as Raksha Bandhan, Holi and Diwali are unimaginable without sweets or mithai, and coconut barfi or nariyal ki barfi is at the top of the list right along with Rasogulla, Barfi, Kaju Kathali, Gulab jamun and laddu.

Coconut burfi, Indian mithai, is very simple to make at home and this recipe only takes 10 mins. Moreover, it doesn't involve lots of labor, only four ingredients are required and a straightforward method of cooking. Easy to find from Asda, Walmart, Fresco Groceries stores.

Ingredients
2 cup Grated coconut
1/4 Cup Sugar
4-5 Almonds, Sliced/Chopped
2 tsp Ghee
4-5 Elaichi (Make it into Powder) or 2 tsp Rose Water

Method:
1. Heat a heavy Karahi (Wok or pan) on Medium Heat. Add 2 tsp desi ghee in a heavy karahi and heat it gently.

2. When ghee is melted and hot, then add the grated coconut and cook for 1 minutes on medium heat until light brown, stirring all the time.

3. Add the condensed milk, mix well and cook until its thick on for approx 1-2 minutes.

4. Add 1/4 Cup Sugar Keep stirring the mixture to prevent it from sticking to the bottom of the karahi. Cook it for approx. 1-2 mins.

5. Add Elaichi Powder (made from 4-5 Crushed Elaichi) or 2 tsp Rose Water.

6. Now you will see that the mixture will become quite thick and sticky. It will also acquire a deeper golden color. Now is the time to take it off the heat.

7. Grease a platter or tray and spread the mixture on it. Smooth the top and sides.

8. Allow it to cool down completely, then cut into squares or any shape that you want. For laddoos, shape the mixture into small balls and roll them in some dry coconut.
