4 turkey thighs, 4 lbs

1 tbsp sea salt
1/2 tsp black pepper
1 tbsp finely chopped fresh thyme
1 tbsp finely chopped fresh sage
2 tsp fresh thyme
Zest of large lemon, about 1 tsp

Refrigerate uncovered for 12-24 hours

Bake in preheated 375F oven until the internal meat temperature reaches 180 F

Gravy:
1/4 cup ( 58 g ) unsalted butter
1/4 cup ( 30 g ) flour
2-1/2 cold chicken broth
1/2 tsp onion powder
1/4 tsp paprika
Black pepper
