Bake a beautiful cake for your mom for Mother's Day and the whole family will enjoy this incredible strawberry cake with cream! Here I show you the best recipes for cakes with strawberries. Strawberry cake with mascarpone or with paradise cream and strawberry cake with yogurt cream. Strawberry cakes that melt in your mouth, so delicious and moist!

✅ Ingredients / Recipe 1: (1 cup = 250 ml)
0:00 Recipe 1 - Strawberry cake with mascarpone
(For a cake tin with a diameter of 26 cm (10.2 inches)
Biscuit:
80 g flour (1/2 cup)
40 g cornstarch (1/3 cup)
4 eggs (separate)
100 g icing sugar (4/5 cup)
30 g melted butter (3 tablespoons)
pinch of salt

3:42 Cream:
500 g mascarpone (2 cups)
Whip 300 ml milk (1 1/4 cups) with Paradies Creme Vanilla (Dr. Oetker)
Cream cheese 175 g (2/3 cup)
75 g powdered sugar (2/3 cup)
220 g strawberries pureed (about 1 1/2 cups)
1 tbsp lemon juice
9 sheets of gelatine (15 g)

(Place the cake in the fridge for at least 2 hours beforehand):
200 ml cream (4/5 cup) + 1 tablespoon sugar
1/2 tablespoon butter or margarine
100 g almond flakes (about 1/2 cup)
About 500 g strawberries halved

500 ml water (2 cups)
2 packs of red cake jelly (cake glaze) (11 g each)
100 g sugar (1/2 cup)

✅ Ingredients / Recipe 2: (1 cup = 250 ml)
8:55 Recipe 2 - Strawberry cake with yoghurt cream
Dough:
3 eggs
110 g sugar (1/2 cup)
Stir until very creamy
60 g oil (1/3 cup)
180 g flour (1 1/3 cup)
3 teaspoons baking powder
90 ml carbonated orange soda (3/8 cup)
Baking pan: 26 cm (10.2 inches)
Bake cake at 170 °C (338 °F) top and bottom heat for 20 - 25 minutes

10:40 Cut strawberries into small pieces.
350 g strawberries (about 2 cups)
Halve about 10 strawberries.
Distribute half of the chopped strawberries.
Arrange the strawberries as I show.

12:48 Cream:
Place 3 sheets of gelatine (5 g) in cold water and 8 sheets of gelatine (13 g) in another bowl. Leave to soak for a few minutes.
300 g cream cheese (1 1/5 cup)
400 g yogurt (natural) 1 2/3 cups
1 teaspoon vanilla extract
130 g sugar (2/3 cup)
1 teaspoon lemon juice
250 ml whipping cream (possibly low-fat 18 % fat) 1 cup
Squeeze the 8 sheets of gelatine well.
Melt the gelatine at a low temperature. Not too hot!
Add a large spoonful of the cream and mix well.
Immediately pour the warm gelatine into the remaining cream.

Assemble the cake as I show.
Now chill the cake for 30 minutes.

15:24 Cake icing:
250 g strawberries (about 1 1/2 cups)
3 tablespoons sugar (or to taste)
Dissolve the 3 sheets of gelatine.
Pour immediately onto the slightly cooled cake.

Then chill the strawberry cake for at least 4 hours (or overnight)
