Before you call me crazy, just hear me out. This coconut bacon recipe isn't trying to act like bacon, yet it is a surprisingly yummy plant based option for that vegan blt recipe calling your name. Try it before you knock it, then try and tell me it didn't blow your mind... because it blew mine! Read on for all my tips + tricks for making the coconut bacon of your dreams.

00:08​ Make the coconut bacon
00:09 in small bowl, pour 1 tbsp tamari
00:11 Add in 1 tbsp maple syrup
00:13 Add in ½ tsp liquid smoke
00:19 Add to 1 c unsweetened coconut flakes
00:21 Add ¼ teaspoon smoked paprika in bowl
00:23 Add in ¼ tsp black pepper + 1/8 tsp sea salt
00:25 Mix seasoning into coconut flakes
00:28 Toast coconut mixture until golden
00:33 Toast 8 slices of sandwich bread
00:34 Spread 1 avocado (divided into 4 pieces)
00:35 Add 4 slices of tomato to bread
00:36 Add coconut bacon to bread
00:37 Place 4 lettuce leaves on sandwiches
00:38 Close, cut, and enjoy!
