THE RUB:
2 tbsp sugar
1 tbsp kosher salt
1 tbsp black pepper
1 tbsp chili powder
1 tsp chipotle powder
1 tsp dry mustard
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp thyme
Combine all ingredients and mix well. Shake rub on chicken thighs, being sure to get some under the skin.

PEACH RUM BBQ SAUCE:
3 peaches peeled and chopped
3 tbsp butter
1/2 cup minced onion
1 tsp garlic
1 tbsp fresh ginger
1/3 cup rum
1/2 cup brown sugar
2 tbsp mustard
2 tbsp Worcestershire sauce
1 tbsp hot sauce
1/4 cup apple cider vinegar
Saute the onions and garlic in the butter, add ginger and saute. Add rest of ingredients and cook over medium heat until sauce thickens and becomes "jammy"
