Tonight's #cookdinnerwithme was super easy and delicious! Erin's whole family loved this salad. It stores extremely well. So, it would be a good contender for meal prepping. We've literally had this salad once every week since we first tried it. It serves well as a snack, lunch, dinner, or a side. Erin said she would even bring this dish to a potluck if she was responsible for bringing veggies.
