食譜:
貝果6個
1杯=200毫升

麵團:
113克*6個

高筋麵粉360克(3杯)
白糖15克(1大勺)
鹽6克(1小勺)
酵母6克(1+1/2小勺)
冷凍藍莓140克
檸檬汁(大約5克)
水100克(1/2杯)
無鹽黃油15克(1大勺)

煮貝果的水
水1000克(5大杯)
白糖50克(3大勺+1小勺)

烤箱預熱15分鐘
200°C
烘烤22分鐘

Tips:
麵團揉好後鬆弛10分鐘
切分成6個,滾圓
發酵到1.5倍大
擀開長20釐米,寬10釐米,
光滑面朝下,捲起麵團,搓成22~25cm長
一端亞開,放入另一端,接口捏好,底部接縫捏好,接縫處壓在麵包底部中間
發酵30分鐘到1.5倍大
(烤箱提前15分鐘預熱)
煮水每面30秒

Lemon juice (about 5 grams)

Unsalted Butter 15g(1 tbsp)

Boiling water for bagels:
Water 1000g(5 tbsp)
Sugar 50g(3 tbsp+1 tsp)

Preheat the oven for 15 minutes
200°C
Bake for 22 minutes

Tips:
After kneading, let the dough rest for 10 minutes
Cut into 6 pieces and roll into balls
Ferment until 1.5 times larger
Roll it out to a length of 20 cm and a width of 10 cm.
With the smooth side facing down, roll up the dough and roll it into a length of 22 to 25cm
Open one end, put in the other end, pinch the interface, pinch the bottom seam, and press the seam in the middle of the bottom of the bread
Ferment for 30 minutes until 1.5 times in size
(Preheat the oven 15 minutes in advance)
Boil water for 30 seconds on each side
