🟢材料:
雞腳 900 克
檸檬 2 個
洋蔥 1/2 顆
薑 20 克
芫荽 1 小把
蔥 1 根
紹興酒 1 湯匙
魚露 2 湯匙
糖 2 湯匙
泡椒 適量
鹽、胡椒粉 適量

🟢做法:
1️⃣ 雞腳用些鹽水浸泡 10 分鐘去除雪味雜質,洗淨。
2️⃣ 燒一鍋水,水滾後把雞腳放進去,加入薑、蔥、1 湯匙紹興酒、適量鹽,中火煮 10 分鐘。
3️⃣ 煮好的雞腳撈出放入冷水中,最好可以啤水 30 分鐘。
4️⃣ 雞腳用涼開水過一遍,瀝乾水份備用。
5️⃣ 把雞腳放入盤中,加入洋蔥絲、檸檬片、芫荽、薑片、泡椒、胡椒粉、2 湯匙魚露、檸檬汁、2 湯匙糖、適量鹽及鮮菇粉拌勻,冰箱醃製 6-8 小時。

🟢Ingredients:
Chicken Feet - 900 grams
Lemons - 2
Onion - 1/2
Ginger - 20 grams
Coriander - 1 small bunch
Spring Onion - 1 stalk
Shaoxing Wine - 1 tablespoon
Fish Sauce - 2 tablespoons
Sugar - 2 tablespoons
Pickled Peppers - to taste
Salt, Pepper powder - to taste

🟢Cooking Directions:
1️⃣ Soak the chicken feet in saltwater for 10 minutes to remove any impurities and wash them thoroughly.
2️⃣ Boil a pot of water, then add the chicken feet, ginger, spring onion, 1 tablespoon of Shaoxing wine, and salt. Simmer over medium heat for 10 minutes.
3️⃣ Scoop the cooked chicken feet out and place them in cold water. It's recommended to rinse them under running water for 30 minutes.
4️⃣ Rinse the chicken feet with cool boiled water, drain excess water, and set aside.
5️⃣ Place the chicken feet in a large bowl, add shredded onion, lemon slices, coriander, ginger slices, pickled peppers, pepper powder, 2 tablespoons of fish sauce, lemon juice, 2 tablespoons of sugar, salt, and mushroom powder. Mix well and marinate in the refrigerator for 6-8 hours.
