How To Grill Quail: These crispy bacon wrapped quail are stuffed with gooey pepper jack cheese, a sliver of fresh jalapeno, and drenched in a finger-lickin glaze! Let's master them together!

Grilled Quail Recipes are not hard to come by in North Texas but this one is my favorite. This style can also be done with boneless chicken thighs if you cannot access good quail in your area. The recipe can be used exactly the same for about 8 chicken thighs.
Bacon Wrapped Quail Recipe:
Semi-boneless quail, skin on, cleaned and ready for cooking
Center cut bacon (You may need 2 packages)
1 lb. pepper jack cheese (may also use Monterrey jack)
2-3 jalapenos, sliced into slivers - remove seeds and ribs for less heat
toothpicks for securing
Glaze- Red pepper jelly or apricot jelly, 1 clove garlic, splash soy sauce, splash lemon juice or red wine vinegar, salt as needed
Complete wrapping the quail in bacon as shown in the video. Grill over a charcoal fire 6-7 minutes per side or until a probe thermometer registered 165 degrees. Baste with sauce often. Rest 15 minutes. Remove toothpicks and serve hot.
