3 Ways To Prepare Morel Mushrooms For Long Term Storage:
First step is always to clean morel mushrooms. Cut in half lengthwise. Put in a bowl of 2 liters water and 2 tbs sea salt for 3-5 minutes. Agitate. Rinse with cold water.
1. DEHYDRATION
Place morels in a tray dehydrator. Run at 110 deg F for 8-10 hours or until brittle. Store in a air-tight container.
2. COAT AND FREEZE
Roll wet, cut in half morels in flour. Place on a cookie sheet or baking tray and freeze overnight. Place in a sealed container in the freezer.
3. SAUTE AND FREEZE
This method is great for retaining the texture and the flavor of the morels. Saute in butter or butter substitute for just long enough to release the juices. Let cool in a bowl. Freeze in pre-portioned sizes.
