Korea Dried Scallops 50pcs
Shaoxing Wine or Dry Sherry 1tsp
Water 1~2cup
Cabbage 300~350g
Ground Pork 300g
Dumpling Wrappers 50sheets

A.Salt 1/2~1tsp
A.Soy sauce 1tbsp
A.Sugar 1tbsp
A.ajinomoto 1/2tsp
A.Dried mini shrimps 1tbsp
B.Shaoxing Wine or Dry Sherry1tbsp
B.Water 1tbsp
B.Sesame oil 1tsp

1. Rinse the Korean dried scallops slightly, add water and a little Shaoxing wine in a bowl, soak and submerge the dried scallops for half an hour.
2. Do not pour out the water of the scallops, remove the ligaments one by one and put back into the water, steam for 15 minutes to remove the fishy, draining the water without using.
3. wash the dried shrimp skin slightly with water, then take a pot on low heat and dry fry, then chopped for use.
4. Cut cabbage into small pieces and put into a mixing bowl and mix slightly with pork minced meat, allowing cabbage to cover pork fat and isolate from water.
5. Add ingredients A to meat mixture and stir on low speed for about half a minute.
6. Add ingredients B and mix from low to medium speed to get the viscosity and elasticity, about 2~4 minutes.
7. For newcomers, you can find a large plate to lay all the filling flat and divide it into 25 compartments with a spatula.
8. Each compartment in the process of wrapping dumplings into two, respectively, wrapped in two dumplings, each dumpling wrapped in a scallop.
9. You can eat now or freeze(use of iron baking pans) the dumplings first to fix the shape, and then knock them up and freeze them in sealed bags.
10. Because cabbage will be watery when cooked, it is recommended to use water twice when cooking dumplings to make them less likely to break the skin.
