Chicken breast recipe | Easy chicken breast recipe | Break the spice chicken breast

Today I'm sharing my best chicken breast recipe. This recipe makes the most tender and juicy chicken breasts! This one pot chicken recipe is perfect for weeknight as well as a meal prep option. You can also switch the chicken breast for chicken thighs or any other part. Give this a shot and it's surely going to turn into your favourite quick dinner recipe!

INGREDIENTS:
450g/1 lb chicken breast (boneless, skinless)
Olive oil
— marinade —
5 tbsp yogurt
1 tsp cumin powder
1 tsp red chilli powder
1/2 tsp black pepper
1/4 tsp cinnamon powder
1 tbsp dried oregano
1/2 tsp salt
1 tbsp tomato paste
1 tbsp grated garlic

METHOD:
1. First we need to get all the chicken breasts into uniform thickness. You can do this by pounding with a meat mallet/rolling pin or slicing them in half
2. Mix all the marinade ingredients, taste and adjust seasoning as per your preference. Coat the chicken breasts well and let it marinate for at least 30 mins. For best results, marinate overnight in the refrigerator
3. In a wide pan/skillet, heat some olive oil on medium flame
4. When the oil is hot, add the chicken breasts without overcrowding the pan
5. Fry for 3 mins. If the fillets are thicker, fry for 4 mins
6. Flip and fry the other side for 2 minutes. By now the chicken is almost done
7. Cover and cook on low for 1 minute. Switch off the flame and rest for 5 mins. Resting allows the chicken to cool down and reabsorb its juices
8. Serve it with a refreshing mint yogurt dip (3 tbsp yogurt, 1 garlic minced, 1 tsp mint and salt to taste) or with my quinoa salad. You can also use these chicken breasts in sandwiches/wraps. Enjoy!

• No dried oregano?
Use any dried herb of your choice

• Can chicken thighs or bone-in chicken be used?
Yes. Cooking time will vary depending on the cut of meat

• No yogurt?
Curd can also be used

• No olive oil?
Butter or cooking oil can be used

TIPS:
• Don't overcook the chicken breast or they will turn rubbery
• This is great for meal prep. You can either cook and store or store the marinated chicken in the freezer
