This video provides step-by-step instructions on how to make your own honey from dandelions. The recipe produces 1 cup honey. Pick dandelions in the morning, once they are fully opened. They are easiest to pick and prepare in the morning. When removing the stems and leaves, soaking them in water helps prevent the yellow pollen from staining your skin.

Ingredients:
2 cups dandelion petals
2 cups water
1 1/4 cup sugar
1 slice of lemon 1/4 inch thick
1 Tablespoon vanilla extract

Steps:
Prepare 2 cups petals as shown in the video
Boil 2 cups water and add petals
Bring to boil and simmer 30 minutes
Remove from heat and steep for 6 hours or overnight
Strain the petals from the liquid. Put the liquid into a pot and bring to a boil. Add sugar and continue heating until the sugar is dissolved.
Turn heat down to medium and continue to boil until a candy thermometer reads 230F - at this temperature, you will get a liquidy honey. If you heat longer you will get a harder consistency and a higher temperature will cause the honey to become hard like candy.
Remove from heat immediately and pour into sterilized jars.

I had originally thought to call this video - "You Don't Need Bees to Make Honey" but then I thought that to be ironic because without bees, you wouldn't have the dandelions needed to make this honey. So in essence, you really do need bees for honey.
