WHITE BEAN & BASIL STEW
INGREDIENTS (4 PEOPLE):
3 Tins of Cannellini Beans
1 Tin of Butter Beans
1 Onion
1 Carrot
2 Cloves of Garlic
5 Ripe tomatoes
1 Bouquet Garni (Bay Leaf, Thyme and Parsley)
Oil for frying
2 Cloves
1 Tbs Salt
Plus this for Extra Flavour:
3 Cloves of Garlic
1 Tbs Fresh Basil (or dry)
1/2 Cup of oil

White bean and basil stew is one of those recipes that you really appreciate in winter time. I found it whilst browsing through my mum old cooking books and since I've cooked it, my kids really like it and ask for it frequently. I think the basil is what got them hooked to it in the first place.
The addition of the "Extra Flavour" makes this dish a winner at the dinner table.
