Makhani, with its deeply colored and flavorful gravy, is perhaps one of the most beloved Indian curries. This Vegan Tofu Makhani is best served with naan bread or basmati rice for a delicious, healthy meal.

Indian Butter Tofu | Tofu Makhani
Ingredients:
Marinade:
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp non dairy yogurt
1 tbsp garam masala
1/2 tbsp chili powder
add salt to taste
2 blocks silken tofu (thawed and pressed after freezing)
2 tbsp olive oil for pan frying

Gravy:
1 tbsp olive oil
1 white onion
500 ripe diced tomato
1 tbsp non dairy butter (add more as needed)
1 tbsp ginger paste
1 tbsp garlic paste
30g toasted cashew
2 tbsp coconut sugar
1 tbsp garam masala
1 tbsp chili powder
1/2 tbsp apple cider vinegar
1/2 cup water
1 tbsp dried fenugreek leaves
salt to taste
2 tbsp non dairy yogurt
fresh cilantro/coriander leaves
toasted cashew nuts for garnish
best served with rice or naan bread
