This video shows you how to make a simple, authentic middle eastern spice blend, called Zaatar. Slightly earthy, savory, nutty, aromatic, and tangy, it is quite versatile and can be used to enhance a wide variety of recipes. Traditionally, is often mixed with olive oil and salt and served as a dip for bread, though itโs also fabulous stirred and sprinkled over many foods.
Za'atar is generally a combination of thyme (woodsy and floral), sesame seeds (nutty and rich) and sumac (tangy and acidic). However, like many traditional recipes, it vary in ingredients and amounts depending on the region and the cook. I really love adding in some dried oregano, cumin and coriander seeds for extra complexity. You can experiment and find which flavors taste best to you.
Ingredients you need
There's no rule for how much of each ingredient to include, but a good guide to follow is equal measurements of all ingredients. I like the nuttiness of sesame seeds Feel free to experiment and discover what ratio tastes best to you.
2 tbsp white sesame seeds
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp ground sumac
1 tbsp dried oregano
1 tbsp dried thyme
salt (optional) Honestly, you don't need to add salt when the whole mix is so flavorful and in the recipes you'll use might as well have salt.

How to use zaatar?
Some of my favorite ways are -

Sprinkle over salads, homemade naan, makki ki roti or lavash.
Use it as a seasoning for meat or vegetables.

Sprinkle over popcorn, eggs or avocado toast.
