I planted 4 zucchini plants this year and have been supplying my family, gardener and who else stops by with zucchini. Still, after you bake a few zucchini breads you want something else. Enter, Mock Apple Pie.

Its so good that I've made it 3x so far. Everyone who has tasted it CANNOT believe how this can be zucchini and a few have even said it tastes even better than real Apple Pie!!

I'm going with, "since its a vegetable it is more healthier..." are you with me on that?

Recipe: Bake @ 350 until crust is golden brown - approx 35 minutes.
1 large zucchini
1/2 C. Brown Sugar
3/4 C. White Sugar

Spices:
2 t. Cinnamon
1/4 t. Nutmeg
1.5 t. Cream of Tartar
1/2 t. Salt
2 T. Corn Starch
1 t. Vinegar
1 T. Butter
1 t. Vanilla

Peel and core zucchini. Place in a large pot, add above ingredients. Cook over medium heat until zucchini is translucent. Do this for about 20 minutes - be careful to not burn bottom of pan. Keep stirring. Might need to lower heat. The rest of the details are in the video

Hope you enjoy this recipe and demonstration. When I gave slices to folks, I did not tell them it was zucchini until after they exclaimed, wow this is so good. You grew this? Your apples are HUGE! LOL!
