🟢材料:
牛肉 2 公斤
芫荽 100克
蒜 1整個
辣椒 3隻
薑、蔥 適量
生抽 4 湯匙
蠔油 4 湯匙
陳醋 3 湯匙
糖 1 湯匙
麻辣紅油、花椒油 適量
鹽、芝麻油、烘焙芝麻、熱油 適量

🟢做法:
1️⃣ 芫荽洗淨切段,蒜頭切碎,辣椒切碎備用。
2️⃣ 牛肉洗淨去筋膜, 切片。大火煮滾一鍋水,加入薑和蔥,把牛肉片放入大滾水中灼熟,不用煮太久,再次滾起就可以撈出來。
3️⃣ 灼熟的牛肉加入生抽、陳醋、蠔油、麻辣紅油、花椒油、糖、適量的鹽和芝麻油拌勻。
4️⃣ 最後加入芫荽拌勻,撒上炒過的芝麻即可。

🟢Ingredients:
Beef - 2 kg
Coriander - 100 g
Garlic - 1 whole bulb
Chili peppers - 3
Ginger, spring onions - as needed
Soy sauce - 4 tbsp
Oyster sauce - 4 tbsp
Vinegar - 3 tbsp
Sugar - 1 tbsp
Spicy chili oil, Sichuan peppercorn oil - as needed
Salt, sesame oil, toasted sesame seeds, hot oil - as needed

🟢Cooking Directions:
1️⃣ Wash and chop the coriander, chop the garlic and chili peppers.
2️⃣ Wash the beef, trim off the fascia, and slice it. Bring a pot of water with ginger and spring onions to a boil, add the beef slices and blanch them briefly. Do not overcook, just blanch until the water comes to a boil again, then remove the beef slices.
3️⃣ Mix the blanched beef with light soy sauce, vinegar, oyster sauce, spicy chili oil, Sichuan peppercorn oil, sugar, salt, and sesame oil.
4️⃣ Finally, add the coriander and mix well, sprinkle with toasted sesame seeds before serving.
