INGREDIENTS:
๐น Extra virgin olive oil (I used Early Harvest)
๐น 1 large onion, chopped
๐น 3 garlic cloves, minced
๐น 2 carrots, chopped
๐น 3 tsp dry oregano
๐น 1 1/2 tsp cumin
๐น 1 tsp rosemary
๐น 1/2 tsp red pepper flakes
๐น 2 dry bay leaves
๐น 1 cup crushed tomatoes (from a can)
๐น 7 cups low-sodium vegetable broth
๐น 2 cups red lentils, rinsed and drained
๐น Kosher salt
๐น Zest of 1 lemon
๐น Juice of 2 lemons
๐น Fresh parsley for garnish
๐น Crumbled feta cheese to serve, optional
