Quinoa Salad with Saffron

In the Southwest.


On this occasion I want to show you how to make a super healthy, colorful and delicious Saffron Quinoa Salad!


This is what you need:


¾ Cup. Quinoa white (pre-rinsed)
1 ½ Cup. Water warm
¼ tsp. Garam Masala
1 Pinch Saffron threads
2 oz. Red onion small diced
4 oz. Cabbage purple thinly sliced
2 Tomatoes medium diced
1 oz. Sun dried tomatoes chopped
1 ea. Jalapeño pepper small diced
¼ oz. Basil chopped
¼ oz. Cilantro chopped
¼ oz. Parsley chopped
¾ oz. Lemon juice
Grated lemon rind
1 oz E. V. O. O.
Pepper
Salt


Grind saffron into a powder
Bloom saffron with ½ oz. of warm water
Let saffron rest for 10 minutes
Add rinsed and dried quinoa to a hot skillet
Add water, salt, Garam Masala and bloomed saffron
Once boiling cover, reduce heat and simmer for 20 minutes
When done, turn off heat and let rest covered until quinoa reaches room temperature
Dice and slice onion and cabbage
Dice and chop tomatoes and sun dried tomatoes
Brunoise Jalapeño and chop basil, cilantro and parsley
Combine all the above ingredients in a salad bowl
Add grated lemon rind and lemon juice
Add olive oil, salt and pepper
Mix, serve and enjoy!
