Recipe: Cranberry and Brussels Sprout Salad
Ingredients:

1/4 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons maple syrup
1 teaspoon Dijon mustard
1/2 teaspoon black pepper
1 teaspoon salt
1 Granny Smith apple, partially peeled and grated
1/2 cup feta cheese, crumbled
1/2 cup chopped pecans
1/2 cup dried cranberries
1 bunch green onions, chopped
1 pound Brussels sprouts, shredded
Cooked bacon, crumbled (as desired)

Instructions:

In a large mixing bowl, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, black pepper, and salt to create the dressing.
Grate a Granny Smith apple into the dressing, ensuring it's well coated to prevent browning.
Add crumbled feta cheese, chopped pecans, dried cranberries, and chopped green onions to the bowl.
If using, crumble cooked bacon into the mixture.
Trim and shred Brussels sprouts by cutting off the tip, removing the core, and thinly slicing them.
Add shredded Brussels sprouts to the bowl.
Toss the salad until all ingredients are well coated with the dressing.
Taste and adjust the seasoning if necessary.
Serve immediately and enjoy this delightful fall salad!
