Serves 6
3 cups diced watermelon
1 jalapeno pepper, seeded and diced small
(* add seeds for additional heat)
1/2 bell pepper, diced small
2 green onions, diced fine white part only
1/4 cup fresh cilantro, chopped fine
1 lime, juiced
Combine all ingredients in a glass bowl. Refrigerate for 30 minutes.
Can be made up to 4 hours ahead. Enjoy with Tostitos Scoop Chips.
