Swiss Wings are a popular dish of sweet soy sauce-flavoured chicken wings often served in Hong Kong's Chinese bistros, known as cha chaan teng. Despite the name "Swiss," it has no relation to Switzerland and is thought to have originated in either Hong Kong or Guangzhou. A popular but unverified tale regarding this dish revolves around a Western diner inquiring about a menu item called "sweetened soy sauce chicken wings" in a restaurant. The Chinese server, who didn't speak English very well, referred to the dish as "sweet wing." The customer, in a mix-up, heard "sweet" as "Swiss," and the name "Swiss Wings" has been in use ever since. These delicious wings can be paired with noodles, rice, or even porridge. While the latter is not a typical combination in Hong Kong, the sauce's savoury flavour complements plain porridge exceptionally well.

Braised wings
———
2 stalks spring onion, tied into a knot
4 slices of young ginger
100g rock sugar
120ml light soy sauce
160ml premium dark soy sauce
400ml water
12 chicken mid wings

Other ingredients (to make lo mein for 1 person)
———
A handful of green leafy vegetables
1 portion or 75g of wanton noodles

Mix the noodles with 1.5 scoops of the braising sauce and half a teaspoon of sesame oil.
