Here's another quick, simply brilliant and delicious cake for you. I also have a super delicious rhubarb casserole for you online.
For this fluffy cake I need:
125g butter or margarine
125 grams of sugar
1 whole egg and again
3 eggs (separate and stiffen the egg whites alone)
125 grams of flour
2 teaspoons of baking soda
topping:
250 to 300 g fresh rhubarb
Possibly 2 tablespoons of sugar (if it is extremely acidic.)
powdered sugar for dusting
Rhubarb is not peeled!!
Beat all ingredients until fluffy, beat 3 egg whites until not quite stiff and fold into the finished dough.
Put everything in a 26 mold and cover with the rhubarb. Press down a little. maybe add the sugar here.
Preheat, bake at 170° for approx. 20-25 minutes
Let cool and then dust with icing sugar.
Enjoy now.
