This is one of my husband's favorite dinners, so much so that he chose it for his Father's Day Dinner. It has a few more steps than other recipes, but it's totally worth it.

Instant Pot Short Ribs
6-8 short ribs
1/2 cup flour
4 pieces bacon diced (can use pancetta)
2 T olive oil
1 onion diced
3 whole carrots diced
2-3 cloves garlic
2 cups Beef Broth (can 1/2 red wine 1/2 beef broth)
Optional (sprigs of thyme & rosemary)

Turn Instant Pot to saute mode, when hot add bacon and cook until crispy. While bacon is cooking, coat ribs with flour and sprinkle with salt and pepper. When bacon is done, remove bacon from instant pot, but leave grease. Add olive oil to pot. While still on saute mode brown ribs on each side (45 seconds) and set aside.

Add onions, carrots, and garlic to pot and saute for a couple minutes. Add beef broth and season with salt and pepper, turn off saute mode. Add ribs to pot and sprinkle bacon and herbs on top. Close and seal lid. Push manual and set for 35 minutes. Naturally release for at least 10 minutes. Plate ribs and enjoy with mashed potatoes and gravy! Yum!!
