This enoki mushroom tofu wrapped in roasted seaweed and covered in soy garlic sauce is just what you’ve been missing! It’s so flavorful and tastes yummy over rice or as a side dish. You only need a few ingredients to make this addictingly delicious recipe!

Enoki Tofu Rolls
Ingredients:
400g enoki mushrooms
2 blocks silken tofu (thawed and pressed after freezing)
2-3 nori sheets
salt and pepper to taste
1 tbsp olive oil

Sauce:
1 tbsp olive oil
3 cloves garlic
1/2 white onion
300ml mushroom stock
1/8 cup low sodium soy sauce
1 tbsp coconut sugar
salt and pepper to taste
slurry (1/4 cup water + 2 tbsp cornstarch)
garnish with coriander and sesame seeds
