UPDATE:
The issue with the exposure ended up being a firmware issue as I suspected. I eventually got the updated files which came directly from Elegoo support. The update put me to version EL3D-3.0.2 and V4.3.12_LCDC/1620x2560 /F2.19. If you're by chance still having issues I'd check the firmware version and see if you can get the updated files.

I have no longer had any issues with the USB reading

The mono screens (on all the new mono printers from what I've heard) don't come with a glass layer like previous printers. The extremely soft layer is actually the polarization film over the LCD. This is similar to your computer screen and its lack of glass (on most) if you touch it. Most have suggest doing something like adding a piece of FEP and taping it down with Kapton tape to protect the screen, or even putting a cell phone screen protector over top of the polarizing film. I've added a sheet of FEP and the printing was unaffected.
